This May, we bring you a collab with OG Neapolitan pizza legends Pasquale and Angelo, of Santa Maria pizzeria.
Back in 2011, when we were planning our pilgrimage through Italy, there was one pizzeria in Ealing doing true Neapolitan pizza. We would go every week to taste their light and fluffy dough hoping to get a glimmer of an insight into how to make this mysterious style of pizza.
Pasquale and Angelo are the OG Neapolitan pizza guys in the UK, opening Santa Maria in 2010. They grew up on the streets of Napoli, playing football, listening to Neapolitan hip-hop and eating 1€ pizzas from the window at Pizzeria del Presidente on Via Tribunale. Their secret move was to buy a potato crocché from Di Matteo down the road and break it onto their pizza to create a pizza crocché. A true work of art!
This month's guest pizza is a homage to the guys and their childhood fave pizza. We had so much fun bringing this one to life together.
Come try our classic margh, served with a portion of crocché (deep fried potato croquettes stuffed with smoked mozzarella). Eat one on its own and then break the rest onto the top of the pizza.
