This month, we’ve joined forces with our mates at Stuzzi - legends of the Leeds hospitality scene - to bring you something different... a Genovese pizza!
Genovese is a sauce that’s ’from Genoa’, but, surprise, surprise, it’s actually from Napoli. Classic! It’s the lesser-known brother of the traditional Neapolitan Ragu. So, we jumped on a flight to Napoli with Stuzzi, in search of the best Genovese around. And guess who we found?
Alfonso – the Genovese King!

He’s been perfecting his Genovese sauce since the '60s, and let’s just say his restaurant is a slice of history. After indulging in some seriously good Neapolitan antipasti (serving the freshest buffalo mozzarella I’ve ever tasted and anchovy stuffed courgette flowers!), we were invited into the kitchen to learn the art of Genovese. The secret? “It’s ALL about the onions!” he tells us. “You must reduce and caramelise the onions to release the sweet flavour, low and slow for as long as possible.”
We brought that recipe back to Leeds to create a pizza that heroes this lesser-known sauce. Chuck steak and onions, slow cooked for 6 hours until the meat is falling apart. Served on our 72 hour dough with Provola Mozzarella, Pecorino Romano DOP & basil.
